Chai Tea Latte Cupcakes

I'm not a coffee drinker, but pretty much every morning {and sometimes in the evening} I have a Chai Tea Latte. While I love Starbucks, and grab it as a treat, it's just too expensive. So I just make my own with Chai Tea Latte concentrate and milk. I was excited to see that International Delight has a new creamer in their Coffee House line, Chai Latte.

Not only could I use some in my Chai Tea Latte, but I could try the Chai Tea Latte Cupcakes that I have been wanting to make for over a year.

With the Holidays approaching, and colder weather, come nights snuggled by the fire with a cup of Chai Tea Latte or Hot Cocoa. Besides the classic flavors, International Delight has some more amazing flavors. In their Coffee House Inspiration Flavors, how about Vanilla Caramel Cream or White Chocolate Mocha? And they have Seasonal Flavors too...Pumpkin Pie Spice, Vanilla Spiced Rum or even Peppermint Mocha to mention a few.

To easily change the flavor of your cake or cupcake, simply substitute the International Delight Creamer for the milk or water, and you have a wonderful treat!

Chai Tea Latte Cupcakes

  • 1 French Vanilla cake mix {I used Betty Crocker}
  • 1 cup International Delight Chai Latte Creamer
  • 4 eggs
  • 1/3 cup oil
  • 1-2 teaspoons cinnamon
  • 1-2 teaspoons nutmeg
Chai Tea Latte Whipping Cream:
 
  • 1 cup heavy whipping cream
  • 2 tablespoons International Delight Chai Latte Creamer
  • 1-2 teaspoons cinnamon plus a little on top
  • 2-4 tablespoons powdered sugar
Instructions:
 
Cupcakes
  1. Preheat oven to 350 degrees
  2. Mix all ingredients in a large bowl until well combined
  3. Divide batter into cupcake pans or tea cups for a fun presentation
  4. Bake cupcakes for about 15 - 18 minutes
  5. Tea Cups will bake longer depending on the size of the cup, test with a toothpick
Whipping Cream
 
  1. Beat heavy whipping cream until soft peaks form
  2. Add Chai Latte creamer and continue beating
  3. Gradually add powdered sugar and cinnamon
  4. Beat at high speed until stiff peaks form
  5. Top cupcakes and add a sprinkle of cinnamon

Oh my, just one favorite holiday treat?? I'd have to say sugar cookies! Hopefully this year I'll be able to decorate some with my son :)

My favorite Holiday treat is peppermint bark. I bought some homemade once at a craft fair and absolutely loved it! The good thing is my husband doesn't like sweets, so I had a little every day. I even put some into my coffee for a peppermint flavor which was delicious. I see that International Delight has a seasonal peppermint mocha flavor which I will try!
