How do YOU make weeknight dinners special?

 I've been asked how I try to make my week night dinners special.  I thought about it and seriously the first thing that popped into my mind was "I have one". I try and plan my menu Sunday for the week, planning something that is not only nutritious, but something everyone likes and feels comfort from. Planning and making dinner really does make me feel successful!  Like you, our week can get crazy busy with sports, school events,  meetings, and work related items, that actually assembling together for a home cooked meal is special. If I don't plan ahead, it can south really fast.

One of the meals my son never gets sick of is Ultimate Nachos with VELVEETA® and RO*TEL®.  If I'm using VELVEETA®, he'll eat anything. I followed the recipe from the Weeknight WOW site and added a couple of my own twists.

Ultimate Nachos

What You Need

  • 3 tablespoons (or more) Cumin and Chili powder to taste
  • 1/2 lb ground Turkey
  • 8oz. VELVEETA®, cut into 1/2-inch cubes
  • 7 cups tortilla chips (about 6 oz.)
  • 1 cup shredded lettuce
  • 1/4 cup sliced black olives
  • 1 Avocado- sliced
  • 1 Cup Shredded Cheese (I used cheddar)
  • 1 can (10 oz.) RO*TEL® Diced Tomatoes & Green Chilies, well drained


BROWN meat in skillet with your cumin and chili powder; drain. Add  VELVEETA® and RO*TEL® to your meat mixture.  Stir until melted.

PLACE chips on large platter; top with VELVEETA® and RO*TEL® meat mixture and remaining ingredients.

Mmmmm, looks DELISH!

I try to have a meal plan. I think that makes it special because I am not just throwing it together and can focus on the time with my family.

Those look so good. My kids just might eat that too :) We try to make sure we always sit down together as a family. Even though we may be running around to various activities we try to make dinner together a nightly ritual. No electronics, no phone calls, just us. It is a good time for us to reconnect about our various daily lives.

Oh man...we LOVE nachos. I'm gonna have to try this. We've recently implemented no electronics between 6-8pm so everyone has to talk to each other during dinner. I'm loving it!

I plan our menus and all anyone has to do is look on the refrigerator door if they want to know what we are having for dinner. Occassionally I'll throw in a surprise dessert. For example, tonight I will be throwing in a Berry Crisp. I thought it might be just the thing to put a smile on faces as everyone has had the bug that has been going around.

With three kids, one of my favorites is simply to cover the table with butcher paper and place a small mason jar full of crayons at each place setting. Then we can draw and giggle our way through dinner! It's amazing how being a little bit silly can really bring you together as a family!

That's a great idea!  I love the coloring!  I've done that with Thanksgiving dinner actually. So much fun.
