Quick & Easy Meal ~

When I was asked to work with VELVEETA® and  Ro*Tel® my son literally jumped up and down. So I had to do it, right? Who doesn't love cheesy food?  I think once he heard "VELVEETA®", his visions were on the creamy Mac and Cheese he only usually gets on Thanksgiving or those quick evening meals.  If VELVEETA® and Ro*Tel® are mentioned in the same sentence, most people think about that yummy cheese dip you have at parties.  I love that stuff.  So I thought why not add pasta to it and call it a meal?  Here's where I wing it.  I cook like my mother....we just throw things together until we have a meal. 

My household can get busy sometimes........just like yours.  Even though I only have one child, those soccer practices, school events, etc make for some hectic evenings.  Quick meals are a busy families savior. 

This can be a tiny bit spicy, but not bad.  I used the lime with cilantro Ro*Tel®.

What shall we call my creation?  VELVEETA® Dump Ziti Cha cha ? Works for me.  Let's add Quick. 

Quick VELVEETA® Dump Ziti Cha Cha.

Items needed:

  • ground turkey or beef (1lb)
  • VELVEETA® 16oz (half a block)
  • Ro*Tel® (1 can)
  • Pasta - I used Penne because then I could call it Ziti.
  • Olives
  • chili seasoning packet
  • 1c water

Fry ground turkey til brown, add Ro*Tel® with chili seasoning and 1 cup water, stir and bring to soft boil. Add VELVEETA® cut in cubes for faster melting.  Add olives.  Stir and serve.  WaLaa, you've got yourself a meal on those busy night. 

I added a spinach salad and would have loved to have had a big chunk of bread.....but that's just too many carbs for this old body.

Velveeta! I still remember my mom's horror when I came home from Foods class raving about Mac n Cheese made not w/cheddar cheese but w/Velveeta--she still laughs at me today...no fancy cheddar for me please! Just Velveeta! I'll have to think up a good recipe combining it all in a great fast and easy meal.

Since we are down to three of us at home most of the time, it is easier to involve the family in what to make for dinner. My son is of course the most picky so if we ask him, we know it will involve cheese of some sort. :-)

I let each of my kids pick 1 meal they want to eat and help me cook each week.

Here's where I admit that the only 2 things I've ever used Velveeta for are that Rotel queso and soup. I bet my kids would like this!

I try and get my kids to cook with me. I have a 2 1/2 year old that thinks her job is using the measuring spoons to add all the ingredients to the bowl. I have never used Velveeta and Rotel but I hear great things about both especially when it comes to dips.

I love making Queso with Velveeta. Delicious!!! My kids love it when I make homemade mac and cheese with velveeta too - it's so creamy! xoxoxox Jen

Ummm...I make a mean cheesy broccoli soup with velveeta Cheese. Your recipe sounds great! Going to have to give that one a try.
