Potatoes on Sale - Need Recipes

I bought a big bag of potatoes on sale at the local grocery store this week.  Even 10 pounds is a lot for just my husband and me to use up before they go bad.  Anyone have any great potato recipes I should try?

If you like potato chips, how about backing a bunch with a bit of sea salt (or whatever flavors you like) and putting them in zip loc bags.

Then, there's always shredding them and freezing them for future hash browns.

Escalloped potatoes.  If you have the "The Best Casserole Cookbook Ever" by Beatrice Ojakangas and Susie Cushner (I posted about this a few months back), it has amazing escalloped and au gratin potato recipes.  If you don't have it, when I have some time I can post them.

There are also some quiche recipes that call for hash browns as the crust rather than pie crust or bisquick.  You could check those out.

Those are some thoughts off the top of my head...

I've never made potato chips.  Now, that would be fun.

I don't have that casserole cookbook, but I'd love to see your favorite au gratin potato recipe.  We love that, but the weather has been way to hot to bake lately.  I am happy to report, though, that the next few days we should be in the upper 80s instead of lower 100s, so baking a casserole is actually a possibility!

Shredding for hashbrowns.  Brilliant!  I never thought of doing that.  Thanks so much for the suggestions!

Some people mash potatoes and freeze. I have never done this as i don't think they would turn out well. I think they become watery so if you do this just stir, stir, stir when reheating.

This is my family's favorite scalloped potato recipe:

1/2 c. chopped onion   2 Tbs. butter  3 Tbs. flour  S&P

1 1/2 c milk  2 tsp. seasonings ( basil, oregano, thyme,whatever you like)  4-5 medium potatoes, thinly sliced

Sauce:  cook onion in butter until tender  Stir in flour, S&P.....cook for 1 minute. Slowly stir in milk and cook until thickened. Stir in additional seasonings.

Place potatoes in bottom of sprayed baking dish. Pour sauce over top. Bake, covered, at 350 for 45 min. to 1 hour-until potatoes are done.

You can also sprinkle shredded cheese on top. I usually add ham and corn to it and make it a one-pot meal.

*Note*  if you have 1/2-1 c. broth, use that in place of some of the milk for added flavor.

Or....you could make oven roasted fries. Either spice them up or make them cheesy.....or, when I used dry onion soup mixes, I used to cut the taters, toss in oil and dry onion soup mix...seasons them up well.

My family isn't a big potato family.  I like them, but my oldest son doesn't and my hubby doesn't like anything that resembles scalloped and au gratin.

Nice recipes!  I haven't fixed roasted potatoes in years and don't really ever think about fixing them that way.  I really like that idea.  Thanks so much!
