Do you Can?

Do any of you do canning?  I had good intentions a few years ago, but never really got into it...  This year my garden totally flopped - so not much to worry about anyway!  But if you can, what do you like to can, and what are some of your favorite techniques / recipes?

I just started canning this year.  I started with cucumbers and found invaluable information at this site  http://www.pickyourown.org/pickle_relish.htm

So far I've only done water bath canning because pickles and pickle relish are Ok for that.  Now that I've done that successfully I'll be moving on to a pressure cooker.   So far it's not difficult - you just have to be good at following directions because if you vary from them you might wind up with a nice case of food poisoning!

So far I have about 20 jars of pickles and relish.   I'm also making saurkraut.  I had a lot of zukes but I chopped them up and froze them.   Now I'm making tons of eggplant parm and rolatini and freezing that for ready to heat meals.

I do a little. No garden here. We rent and are only allowed a small plot 6x6 or 10x10 (I can't remember which). I had wanted to do a raised garden but time got away from us. Maybe next year.

So far this year, I've done some Strawberry Jam, Strawberry and Blueberry Jam, and the same as syrup.  The syrup is only because the batch made with liquid pectin didn't set well, but sure was great as syrup. Went well with pancakes! Yum!

I would like to do some corn, but not sure if I will get to. I also plan to can some applesauce. We did LOTS of applesauce last year!

Perhaps I'll can some peaches too.

I do alot of canning including green beans, applesauce, pickles, relish, tomatoes, carrots and potatoes.  I freeze peas, peaches, green peppers and strawberries.  We have a medium size raised bed organic garden (not enough room for sweet corn--so I have to buy that from a local farmer)

I have mostly just canned green beans and tomatoes. I also like to cream corn and freeze it. For green beans I use a pressure canner; for tomatoes I use the water bath canner, and for corn I cook in a large bowl in microwave then put in food saver bags.

I just started canning and preserving this year. I kill every plant I touch :D, so I started getting a half share of produce from a CSA every week.

So far I've frozen strawberries, corn, creamed corn, chopped onions, and chopped green peppers. I've canned small small batches of strawberry fruit spread (no pectin), salsa, tomatoes, and pickles, all with a water bath.

Not this year, moved and not enough room for extra bounty!  We're eating what's coming out of my pots.  I'll probably pick up some tomatoes, green beans and apples from a farm market, to can and freeze this year. 

Salsa, spaghetti sauce, Green beans, Dilly beans, apple sauce, and apple pie filling. 

I've canned chicken, homemade soup, jams, I forget what else.but won't do that this year.
