Favorite Company Recipes

Started by TheMenuMom , author of The Menu Mom | Recipes | Menu Planing 6/22/2010 8:43:25 PM

I will have company for the next 3 weeks, so I'll be feeding 8 each night.  What are some of your favorite company recipes?  For my case, I need recipes with no white flour, sugar or milk.  (cheese is okay in a few...)  But even if your favorites have these items, feel free to share for others benefit!  I've been a lazy cook so far this summer, but I guess I have to get on the ball these coming weeks!

Spaghetti!  That's one.  It's pretty easy to fix a big pot of sauce and the pasta and a salad, and most people like it.

I'm just looking at my store's ad for the week and I see bone-in fryer breasts 10 lbs for $10.  I'll be buying a package and cooking it up and taking it off the bone for various meals including chicken enchiladas, also a good company dish.

A taco bar might work, too.  Provide all the fixings and let everyone serve themselves.

Those are off the top of my head, so if I think of more I'll add those later.  I'm looking forward to what others have to add.

Have fun with the houseful of people!

Just thought of another one: pasta salad.  Not sure if you can eat pasta, Christine.  Is that allowed on your eating plan?

We can have whole wheat pasta.  I know we will do taco salad when Matt's parents are here, we all love that.  My parents won't do anything Mexican, or milk, or much red meat...  It should be interesting for sure!

Oh my, you have quite the challenge!  We don't have much company during the summer (probably because we are only home maybe half the time) so during fall/winter is usually a big pot of chili with garlic bread....won't help you any though;-

Here is a recipe that I believe is gluten-free, though the taste might not be for everyone. I love an orange and cinnamon combination but my taste buds are usually different than most;) You could always leave the cinnamon out, of course.

Slow Cooker Orange Cinnamon Chicken

  • 1 c. ketchup
  • 1/4 c. instant tapioca
  • 1 c. orange juice
  • 1 stick cinnamon
  • 6 lbs. chicken thighs, bone-in, skin removed

In a bowl, combine the ketchup, tapioca, and orange juice.  Put about half in the bottom of your slow cooker.  Place the cinnamon stick on top of the sauce.  Put a single layer of chicken in the pot, spoon some sauce over each piece, add another layer of chicken and sauce.  Repeat if necessary.  Cook on low for 6-7 hours until chicken is cooked through.

Thanks Lisa, That sounds different!  Not sure if I would love it or not!  Ketchup has sugar in it, but maybe just plain tomato sauce would work.

Sorry-forgot about the no sugar rule. Your diet must be awfully hard to eat by;-

I did find a gluten-free turkey tetrazzini recipe if you are interested, I could post.
