WHATS FOR DINNER

I thought it might be fun if we post what we are having for dinner each day.  Might give ideas to others.  Sometimes we get in a rut having the same things every week.. and I know every family has their favorites, but trying something new or a dish done in a little different way is fun too.  so here goes

Tonight were having...

Lasagna...garlic bread...salad...and leftover homemade chocolate chips cookies from yesterday.  Here is the salad we are having with the Lasagna.

 

Tomato Parmesan Salad

 

 

Loaded with fresh, ripe tomatoes and robust Parmesan

cheese, this summer salad is sure to please the masses.

Not only does it taste good, but it’s also very pretty!

1-1/3 cups vegetable oil

1 cup red wine vinegar

2 garlic cloves, minced

Salt and pepper to taste

2 bunches romain  lettuce, torn

1 head iceberg lettuce, torn

2 small red onions, thinly sliced  (I use whatever onion i have on hand)

2 large tomatoes, diced

1 jar (4 ounces) diced pimientos, drained

2/3 cup shredded Parmesan cheese

In a jar with a tight-fitting lid, combine oil,

vinegar, garlic, salt and pepper; shake well and

set aside.

In a large salad bowl, combine all remaining

ingredients. Chill until ready to serve. Just

before serving, shake dressing. Pour over salad;

toss to coat. Serve with a slotted spoon.

Last night we had crock pot beef roast, potatoes, and carrots, with chocolate ice and homeade butterscoth sauce on top.

Tonight I am making homeade bbqued beef (with leftovers from last night) on top of cornbread and peacan pie. We were just going to have salads tonight but since it is cold, windy, and rainy, something hot would be better:)

Sounds yummy Lisa.  Its been cold and rainy here lately too so something warm sounds good.  For tonight were having

Breaded haddock fish filets

Fresh Broccoli with cheese sauce

Mixed fruit salad

Im going to chop up some fresh fruit we have on hand..watermelon..apples..oranges..what ever is on hand. Then add a can of fruit cocktail...sugar free..because hubby is diabetic..

I don't grove on any type of seafood, sometimes I wish I did since it is supposed to be healthy but I just can't stomach it.

 

Tonight we are having taco burgers on buns, oven fries, and sauced corn. There are 2 pieces of peacan pie left so whoever gets to them first gets it;-

Im here for that piece of pecan pie please..lol  We usually just have baked fish but I had these prebreaded haddock fillets in the freezer for a while so I wanted to use them up.  They were very good.  We all like most kinds of fish. I have some meatballs in the freezer I had made so I thought Id make some meatball stew.  Recipe to follow.  I have some bananas that need used up so I thought I would make a quick banana bread also.  Ill include the recipe for that one too. 

Meatball Stew

3 medium potatoes..peeled and cubed

1 small package of baby carrots..or cut up fresh ones.

1 large onion chopped

3 celery ribs

1 package of frozen or 12 or so homemade meatballs (make small meatballs if you intend to use in the stew.)

1 can of tomato soup..10 3/4 oz undiluted

1 can beef grazy  or use your own

1 cup water

1 envelope onion soup mix

2 tsp beef bullion seasoning

Place carrots, onions, celery, and meat balls in the slow cooker..In a bowl combine the rest of the ingredients..Pour over the meatballs.  Cover and cook for 8-to9 hrs. or until the veggies are tender..

 

Easy Banana Bread

1 box yellow cake mix

1 egg

1/2 cup milk

1 cup mashed ripe bananas

1/2 cup chopped pecans or walnuts

Combine cake mix, egg, and milk.  Add bananas and beat on medium speed for abt. 2 mts.  Stir in pecans.  Pour into 2 greased bread pans..or these make good muffins also.  Bake 350 for 40-50 mts.  Insert toothpick in the middle to check for doneness.  Cool before removing.

There would have been 1 peice of peacan pie left but I ate it for breakfast, sorry...lol

Today is another dreary rainy day so I made pork stew in crock pot and homeade dinner rolls this morning....I should think of something for dessert too but not sure what. I would have made those banana bars but I have no banana's and too lazy to make a store run...lol.

Well tonight for dinner is easy.  Im going to a banquet at our church and hubby isnt able to attend, so he will get some leftovers and Ill eat there. I am making a dozen cheese spread sandwiches, a dozen ham salad sandwiches and strawberry cupcakes with cream cheese frosting for the banquet.  Im looking forward to a good time.  Happy Friday everyone

We are heading to our camper as soon as my girls get out of school today. I am packing leftover pork roast so we can have bbqued pork on buns and tater tots tonight. I will be making a creme brulee french toast bake to place in fridge overnight for tomorrows breakfast (with strong coffee of course!), pulled out pork chops from freezer to grill tomorrow night...ya I know, that's a lot of pork!- but couldn't findany chicken breats or anything in my freezer ( I really need to stock up again).....Sunday night will probably be pizza as I will be tired from packing to come back, driving back, putting everything away, grocery shopping, and getting my girls ready for school again.

The banquet was quite nice last night. and so much food. very yummy.  But its back to cooking again today.  lol  Tonights menu is

Stuffed green peppers from the local market

Homemade applesauce( I made last fall and froze.. This is the last of it so Im using it up.  I used red delicious apples and didnt add as much sugar becuase of the sweetness of the apples.  Works much better for the diabetic diet.)

Homemade rolls

It's a gorgeous weekend at the camper! The hubs is gone for a bit and the girls are off playing.....

 

I wondered Sharon, if you could share your homeade rolls with me. I made a batch last week and they were kinda awful....first time making them and doubt I will try that recipe anytime soon but I would love to make my own rolls.

I would be glad to share my roll recipe.. I have two that I use quite often.  Ill post one and as soon as I find the other one Ill post it for you also.  Heres the first one. 

Dinner Rolls

I make these in my bread machine.  Not sure what I would do with out that appliance..lol 

1/2 cup plus 1 tab. water

3 large eggs

1/4 cup butter or margarine..room temp

1 tsp salt

3 1/2 cups bread flour

3 tab. sugar

2 tsp yeast ..I use on package

Add water, 3 eggs, butter, salt and bread flour, 3 tab sugar and yeast to bread machine pan in the order suggested by the manufacturer.  Use the dough setting..  When cycle is complete, remove dough from machine to lightly floured surface.  If necessary add a few sprinkles of flour to make dough easy to handle.  Knead slightly and form into rolls.  Cover and let rise in a warm draft free place until almost doubled in size.  Combine slightly beaten egg and 1 tab sugar..brush onto tops of rolls,  Bake 350 for 12 to 15 mts.  until lightly browned and done.  Makes aprox 12 to 18 rolls. 

If you try these Lisa let me know what you think and Ill post the other recipe I use also.

Turkey pan roast

Mashed potatoes/ gravy

Buttered corn

Pillsbury bisquits

I try to do easy things on Sunday as I am at church twice .  I play the piano there and have to be there am and pm services as well as chior practice.. so my sundays are usually busy.  I didnt even make any dessert for today but theres some ice cream sandwiches in the freezer so that will have to do.  lol  Its been a beautiful weekend here and I love it.  Hope to sit out on the deck this afternoon for a while and just enjoy.
