Favorite summer salad recipes

What are you favorite summer salad recipes to use all those great, in-season fruits and veggies?

I made one last night that will definitely be a keeper and we'll likely have many times over the summer.  Here's the link.  It's called Strawberry Fields Forever Salad.  http://find.myrecipes.com/recipes/recipefinder.dyn?action=displayRecipe&recipe_id=1194613

Another favorite is a homemade version of the Insalata Bleu salad from Macaroni Grill which they no longer have on the menu in our area.  It is as follows:

  • Bibb or Boston lettuce - this lettuce really makes the salad. Something about it's smoother, more buttery tast is so good with the stronger flavors of the bleu cheese and vinaigrette.  We've tried Romaine or other lettuce and it's good, but just not quite the same.
  • Chicken breast strips
  • Bleu Cheese - finely grated or finely crumbled is best
  • Toasted, chopped walnuts
  • thinly sliced red onion
  • Balsamic vinaigrette dressing.  For this I just add balsamic vinegar, olive oil, a little dijon or ground german mustard, salt, pepper, and some Italian Seasoning.
  • Toss and serve with some foccacia bread.  YUMMY!

My family loves the fruit salad I make, especially during summer when produce is much better. I don't have the exact recipe but it is simply mixing togther lemon low-fat yogurt and low-fat mayo together, add whatever fruit you like (we like pineapple, strawberries, oranges, sometimes apples or banana's), and drizzle with a bit of honey. Just before serving, add shredded coconut, if desired.

Wish I had the salad ingredients for the Insalata Bleu, Becky.  I have chicken tenders to cook tonight, but I'm totally uninspired. 

I'll definitely follow this thread, too.  We love summer salads.  We grill steak pretty often and sometimes have leftovers which go into a salad later, sometimes with bleu cheese dressing, sometimes with a Greek vinaigrette, which we end up enjoying more than the original steak alone.


MMMM Love Salads!  I was just planning my garden this afternoon!  What's up with all the blue cheese though (EWWW!  he he)  I know, we can easily leave that off.  : )

I can't wait to try some of these salads!  Thanks all for posting!

BTW, I made the chicken fruit salad recipe tonight that I posted above and it was YUMMY!  The only thing was that the printed recipe mentions in the directions to add the sugar, but it didn't tell me how much so I missed it.  Once I realized it, I'd already tossed the salad so to put some sweetness (which it really needed), I grabbed my liquid Stevia and added some drops.  Did the trick alright, but I'll see if I can find out how much sugar is really called for.  I'll let you know if I find out.

3-2-1 Cucumber salad

6 tablespoons mayonnaise
4 tablespoons milk
2 tablespoons vinegar
2 cucumber
1 teaspoon sugar (optional)
1/2 teaspoon salt (optional)

Directions:

Mix the mayonnaise, milk, vinegar, sugar and salt together in a small bowl. Mix until smooth.

Peel and slice the cucumber very thin. Pour the sauce over the cucumber; serve. I usually let it sit for an hour or so so the flavors "Marry"

Georgia Craker Salad (Paula Dean)

1 sleeve saltine crackers

1 large tomatoe finely chopped (I use 2)

3 green onions finely chopped

1 hard boiled egg finely chopped

1 1/2 cup mayo (it sounds like a lot  the crackers blance it)

crush the crackers, mix everthing togther and serve immediatly....

I like to make this when I have leftover chicken and a great salad on a hot summers day.

Chicken and Cabbage Salad:

1 package chicken flavored Ramen noodles

2 cups shredded cabbage

1 1/2 cups cooked shredded chicken

1/3 cup white vinegar

2 1/2 Tbs. sugar(to taste)

2 Tbs. water

4 tsp. canola or vegetable oil

3 Tbs, toasted sesame seed

salt & pepper to taste

In a large bowl, crumble Ramen noodles and add chicken and sesame seeds. Combine the rest of ingredients, including seasoning packet from Ramen noodles and mix well (I use a jar with lid to shake well). Pour dressing over chicken/cabbage mixture and toss well. Refrigerate for 8 hours or overnight.

You can also add thinly sliced red onions if desired.
