Your Most Desirable Recipe

Started by Kelsey , author of A Barefoot Soul 4/10/2010 12:07:19 PM
As I'm sitting down now with my favorite thing to eat, Peanut Sauce (with chicken and rice, of course... I'm not about to eat straight sauce!) I was thinking about how many people now have the recipe for my much loved food, and I'm wondering what your "coveted" recipe is, and the strangest place/way you've had someone ask for it?!

I love a good meatloaf or bolognese sauce. I had a friend from Brazil who made a ham and cheese meatloaf for me once, it was so good. I've never been able to perfect it though, when Ive tried to recreate it.

Myfavorite go-to chicken recipe uses puree'd veggies as it's base. It's called Cody Chicken (named after my sister's ex, who could eat a whole pan!)     Cut up 1 pound or so of boneless skinless chicken breast, or 1/2 breast 1/2 thighs (this is my preference) into even-sixed pieces.  Cook until browned on the outside. Remove from pan. Put 1/2 a diced onion in pan and cook until clear. Now, take a bag of frozen mixed veggies (I use pea/carrot/bean/corn mix) and puree with 1/2 a jar of spaghetti sauce. (I use Newman's roasted garlic) Toss in a handful of fresh spinach, kale or other greens if wanted.  Pour pureed veggies into skillet with onions, add rest of sauce and chicken back to pan. Stir and let simmer until the sauce is reduced and thick around the chicken. I add a "glug" or two of balsamic vinegar or worsestishire (spelling?) sauce right before serving. Serve over rice or noodles with a green salad.        Your kids will be eating several servings of veggies wighout being able to "pick-em-out"! If you serve it with spaghetti noodles, treat it like a regular marinara.  It's really good.

I am going out this morning so I can make Cody's Chicken.  I think I will make a little bit of rice along with the noodles and see how that works, I like rice more then pasta, now the rest of the house LOVES pasta...

Oh my goodness, I made the Cody's Chicken...and Good Grannys Gravy was it good.  I doubled the batch and added 2 small cans of stewed tomatoes.  It tasted just like chicken catchatori(sp) I served it over rice and I know this will be a huge family favorite.  Thank you for sharing.
