Favorite meals for hot summer days?

What are your favorite meals that require very little cooking on those hot summer days when you don't want to use the oven or stovetop?

Cooked spiral pasta, quartered cherry tomatoes, feta cheese, and LOTS of italian dressing... maybe some cooked chicken...


Cook pasta, cook chicken, prepare ahead, store in fridge.

Serve cold = refreshing on a hot summer day! :)


I agree with Ann Marie - take one day and cook up the pasta and chicken and then you have the base for all kinds of meals.

Put them together or use them separately. 

Pasta can have endless combinations - pasta with tuna (drained out of the can), pasta with all the "leftover" veggies in the fridge or straight out of the garden.

Chicken is another with endless possibilities - chicken lettuce and tomato sandwiches/wraps/flatbread, chicken over veggies on "clean out the fridge" day, patty melts using the chicken instead of hamburger.

Something that is really quick - get some italian sausage from the store/butcher (the fresh link kind is perfect) and make "mini" meatballs - yes it means using the stove - but man is it quick.  Squeeze out the links (I make 3 "balls") and brown quickly, then put in sauce ........ again super quick, super easy and different - surprised my family the other night when I did these.  Hubby had his with leftover pasta, daughter had hers with rice and I had mine in a wrap ...... really tasty.
