Packing Frugal, Healthy Lunches & Time-saving Tips

Before I decided to stay at home, I packed my breakfast & lunch daily (had to work really early) and my husband's lunch.  I still pack his lunch every day and it takes a some time to put together a healthy lunch.

Some of my favorite time saving tips are putting leftover soups in the wide-mouth pint mason jars and freezing them - I can just pull it out the night before so it thaws.  He microwaves it at work and eats it right out of the jar.  Sometimes he gets leftovers but often he gets a sandwich. 

I also keep fresh fruit on hand and pack it for him - recently he's been asking for my granola bars so I make a double batch and freeze the extra for later.

When I taught elementary school I was horrified with the packed lunches - we don't have kids but I would love to hear about how you pack healthy lunches for your kids and husbands and save time.  (Unless everyone in the BlogFrog homeschools...then there is no lunch packing at all!)

My struggle has been that my husband doesn't have access to a fridge or a microwave at work, so finding food is harder as the range aside from sandwiches is a little limited. I send him with his food in an esky.

I did a fancy salad at one point, with cold pasta, dressing, baby spinach, feta cheese, olives, and whatever else salad-like i had on hand, he seemed to enjoy that.

I also did cold dogs for awhile, the hot dog roll, with a hot dog sausage (those type of sausages don't actually have to be cooked) and the tomato sauce (ketchup) and mustard and stuff in a little container and he can put it together at work.

Those roles at the shops with ham and cheese on top are good snacks. Another thing is sending the ingredients and having him put together a flat bread wrap with lettuce tomato cheese and some tuna or cold chicken or something.

As for meals you can heat, I used to attend college and had a microwave there. I found leftovers to be the best. We almost always had leftovers from the night before, or I would cook a batch of, say, chilli and rice and freeze it in separate serves.

Well I don't pack my kids' lunch but I did pack my husband's lunch for many years. The main dish- leftovers! He has always had access to a fridge or microwave so left-overs has worked.
If didn't have a microwave I would probably pack sandwiches, fruit, or thermos items, like soup, sloppy joes, and such.

I love convenience, but hate paying for it.  I think it's a great idea to buy those tiny little Tupperware to fill with things like applesauce, fruit, granola, crackers etc,  That way you don't have to pay for the packaging of the individual fruit cups, applesauce, cracker bags.  You could do this all in one day, and then keep in the fridge to pop in lunches everyday.

My husband's lunch really depends on if he is dieting or not. If he is, then I make HUGE green salads, pack lime vinagrette and some fruit. If he is not then it's leftovers, and fruit.

My kids just started back yesterday so here is the lunch for the last 2 days:

day 1: peanut butter and blackberry jam on whole wheat bagels (my 5yr old got one on a mini bagel), 1 Babybel cheese, apple wedges, apple juice and Goldfish (for the older two)

day 2: same sandwiches, only cut in half for the older kids because they didn't have time to eat that much, a pack of baby carrots, grapes, babybel cheese and a cookie, and juice.

For my 5yo he got juice, the babybel cheese and a pack of baby carrots with grapes.

It will pretty much be this way for the rest of the year. the sandwiches will vary, but it will always have fruit/veggies, maybe a yogurt.

OH Jennifer, thanks for sharing that link! These sound really great and it looks like they would fit into the bags they already have!
