I don't entice as well as I should.  We just have a 3 bite rule--quite often after 3 bites, my kids will end up eating the rest of whatever they are trying--amazing!

I have my children try a bite of everything.  Even if they have tried it before and hated it.  My favorite saying, "You never know, taste buds change".

I not only have to entice my toddler, but my husband as well.  I don't really entice, I hide.  My food processor is one of the most precious items in my kitchen.  Spaghetti sauce hides lots of green veggies.  I puree things like spinach or broccoli and stir it in with spaghetti.  The heavy spices hide the taste.  Potatoes is a great place to hide cauliflower.

It all works.  I am probably kind of "old school".  It will all warm up as leftovers... save it in the fridge.  The food is the food.  There are no alternative menus for children with selective palates.

The three bite club is awesome for difficult veggies.

We've just recently moved from having him taste everything, and if he doesn't like it he doesn't have to eat it, and then we'll make him chicken nuggets or grilled cheese or something, to "this is what's for dinner, if you don't eat it you'll be hungry." We've had a bit of fighting over it but it's getting easier once he realized that we really weren't going to be his short order cooks anymore.

Being a short order cook isn't very fun.  I took a Love and Logic class that stated that same kind of philosophy.  "If you don't like what's for dinner, maybe you'll like what's for breakfast."  My youngest has the hardest with that logic.  Works for me though. smiley

Right now we have the "one bite" rule.  Our daughter is 2.5, and she isn't that interested in food right now.  So, she has to have one bite of each thing, then usually she'll be fine until breakfast--and that's where she'll really eat.  And I can get her to eat fruit along with it, most of the time :-)

Healthy dips like hummus or guacamole are great to serve with meals. My kids love dipping their food!

I am a little sneaky. I will make something "just for me" and really get into enjoying it.  I will mumble about how yummy it is and how glad I am that I don't have to share.  When they inevitably ask for a bite, I will look and them and say, "But I made it just for me!"  They beg, and then I "grudgingly" give them a bite.  Their faces light up and they ask for more.  I then graciously decide to share.  I am evil, aren't I?
