Score! I got picky kids to eat veggies!

Kenmore is running a contest right now where we could win $3000 - that would go such a long way to help fund our adoption!! Their contest asks us to feature our "genius tip". My Genius Tip is how to get picky kids to eat veggies, by making veggie smoothies, popsicles and sorbet!

 
Before you make your veggie smoothies have fun! Make the sight of green leafy goodness something they look forward to. We made boats, bouquets, silly faces and played "green fairy" with our veggies. .

To make Kale Veggie smoothies:

Chop up the Kale, Spinach or Collard Greens and fill your blender to the brim. We prefer Kale as it is more nutritious than spinach with 25% more vitamin A, higher levels of Vitamin C and Calcium - it is a true powerfood! It also tastes better than Collard Greens which has a spicy aftertaste (but the kids still enjoyed it). Once you have your blender full of kale, add half a cup of juice. BLend well. Top with 2 bananas and as many berries as you want. I think we added about 2 cups worth. Blend till smooth.   

Serve immediately or freeze into popscicles. If you want to make sorbet, freeze it for 1-2hours, till it just starts getting ice crystals. Then stir. Re-freeze. Wait an hour or two and then stir it again. At this point you can re-freeze and it will stay soft. Our Kale Sorbet is the perfect after-dinner dessert for my dairy-intolerant kiddos. Yummy and good for them.

Who needs to eat veggies for supper when we can have them for dessert! .

This is a great idea Rachel- my daughter loves "shakes" and I usually make them with berries and yogurt. Putting greens in is a great idea for making them more nutritious. thanks!!!

I love the idea of freezing the smoothies into Popsicles!  My son loves smoothies but my daughter isn't a fan.  I bet she would eat a Popsicle though! :)

The popscicles are a hit.  We make ours with Dixie cups and sticks stuck in them.  I love that they are disposable.  It is a pain to clean out the crevices of the popsicle molds.

I just checked out your site!  It would be great if you signed up for the kenmore contest.  They have a section for "life tips" and you seem to have lots of tips!  It could be great exposure for you :)

I love this. And it tastes sweet enough while being so healthy that the kiddos don't mind?

oooo!  I have tried smoothies but didn't even THINK of going the next step and making popsicles!  Great idea.

I don't think I am going to let my kids watch me make this the first time...they would be frightened.
