Menu rut- please help!

Started by Ashley , author of Balancing life, marriage, parenting, and social media while pursuing the perfect 7/12/2010 1:31:19 PM

I have been getting into a menu planning rut lately, and I would love your help! To help keep me a little more organized, I have been linking up to Organizational Junkie's Menu Plan Monday. Well, I spend so much time trying to hunt down new recipe ideas, I thought I would enlist a little help.

I would love it if you could share your favorite recipes here- either through a link to your blog if you have one or just the recipe here. Then, each week I will feature your recipe in my menu plan for the week-- along with a link to your blog thanking you for your great suggestions!

What do you think? Are you willing to help my summer recipe rut?

This isn't the healthiest, but the fried chicken is excellent!

Our most favorite recipe of all time is a modified version of Rachael Ray's Spaghetti and Meatball Stoup .

Here's our version, it's simplified for life with 3 kids!

2 jars of your favorite Spaghetti Sauce - we like Roasted Garlic
3 cups of Chicken Stock
1 pound of lean ground sirloin
1/2 cup grated Parmesan cheese
1/2 cup Italian-style bread crumbs
1 egg, slightly beaten
1/2 pound of Spaghetti noodles

In a large pot, combine the Spaghetti Sauce and Chicken Stock. Simmer over medium heat while you prepare the meatballs.

Mix sirloin, cheese, bread and egg in a large bowl.  Kids love to squish together this mixture, but they need to wash well afterwards! Using a tablespoon, scoop meat and make small meatballs.  Turn sauce up to medium-high heat and let it come to a boil.

Ask kids to break the sticks of spaghetti into thirds.

When sauce comes to a  boil, drop in the meatballs.  Return to a boil, and then add broken noodles. Reduce the heat and simmer for about 10 minutes, or until the noodles are tender.  Make sure the meatballs are cooked through!

Ladle into bowls and serve with salad.  Always a hit!

These are fantastic ladies!! I really appreciate it. I like going through different linkups to find recipes, but often people don't post links. Then I google, and then my day is gone! I am excited to try your recipes- and link to your blogs!

Thank you so much for the ideas!

I too have been in a rut to find something that is good but does not heat up the entire house.  So as I was going through my recipe box  I found this one that I have not made in a long time.  I just make the mix up and put it in the fridge.  I have teenages so it was perfect and they can throw a sandwiches together as they please;

Chicken Salad Croissant Sandwiches:

3 C cooked chicken  (I use canned)

1 C celery, diced

1  bunch of green onions, diced

4 hard boiled eggs, diced

1 C mayo

1/ C Miracle whip

1T lemon juice

season as desired (i use season All salt, garlic powder, chicken seasoning salt)

lettuce (optional)

1 C nuts (optiona-I use cashews)

One dozen Croissants or rolls

1)  Mix chicken, celery, onion, eggs, mayo, miracle wihp, lemon juice and seasoning together.

2) Slice croissants open and place mixture on croisant.  We like to place lettuce on the croissant, then chic mix and then top with cashews .

Enjoy.  The kids are requesting I make more .  Hahah.  It's very amazing when I can please all 4 children at the same time.  Next time I will have to put this recipe on my blog.
