silly question to all the healthy eaters

Since I have been married I have really had a problem figuring out what to eat for lunch! 
 
Silly I know...  feel free to laugh. 
 
I don't like sandwiches 
 
And you can only have so many salads
 
So I'd love to hear some new lunch ideas!

How about re-fried bean and cheese quesadillas on a whole wheat tortilla??  Or a veggie and grilled chicken quesadilla.  I make fajitas and then use the left overs for quesadilla's.  Yummy.

All this being said...lunch is a hard one for me too!


I tend to be on the go at lunch, so I have bars (I like the special K ones) and a piece of fruit usually. It fills me up, is something I can bring with me and squeeze in between meetings or whatever, and I still feel like it's healthy!


lunch tends to be hard for me as well.  i want something somewhat easy but healthy.  I struggle with this so I'm interested to hear some suggestions.  Love the quesadilla idea!

I like to make muffins and quick breads (blueberry, pumpkin, carrot raisin) and keep them in the freezer and then pull them out for lunches for me and the kids.  I add a piece of fruit and yogurt or string cheese and it's a complete healthy meal that gives me enough energy for the rest of the day.

Thanks becky and Julie I love those ideas!! I went to my "specialty" grocery store today and here's what I found.
 
Chicken salad
 
Tuna salad  <---- I'm not a tuna fan or any fish but hey someone else may like it! 
 
Wraps- for some reason I like these better than sandwiches and I feel like you can be more creative.
 
Texas caviar- I had some at the shower I was at last weekend! Amazing!
 
Ok now I have my food juices flowing.... 
 
Any other ideas?

Lunch is never easy for me either.  But what about making stuff in bulk for dinners (like chicken and pasta salad, or chili made with ground turkey) and having leftovers? I love when we have leftovers...it's always what I will make for myself at lunch time.

I love having humus with veggies for lunch or some greek yogurt with a little wheat germ and flax seed mixed in. I have also recently started making green smoothies for lunch. I don't eat huge lunches as I like to save my calories for dinner. {grin}

salads- I could eat salads all the day long, my sisters refer to them as rabbit-food, lol!

I like to grill a bunch of veggies (peppers, zucchini, eggplant) at one time and then I have them during the week to add to salads, make quesadillas or make a wrap/sandwich with hummus.
